Protein Truffle Balls

Want a yummy snack that is nutrient dense, full of protein and so delicious? My protein truffles are so good and so versatile! Feel free to change up the nut butter, protein powder flavor and the add-ins. Just use these amounts and you are good to go!


Protein Truffle Balls

Makes
20-24 protein balls 

INGREDIENTS

1 cup rolled oats

1/2 cup sunflower butter

2 scoops vanilla protein powder* 

1/2  teaspoon unsweetened cocoa

1/2  teaspoon cinnamon

1/4 cup dark mini chocolate chips

1 T honey

1/3 cup sprouted brown rice puff cereal

1/4 cup hot water

DIRECTIONS

Line a sheet pan with wax paper. In a mixing bowl or food processor, fold all ingredients until well combined.

Scoop rounded spoonfuls of the mixture and roll into balls, placing on the prepared sheet pan as you go. Coat with crushed nuts or toppings, if desired. 

Cover and refrigerate 1–2 hours before serving.
