Wild Cod Fajitas

This simple sheet pan dinner makes the best 3 cup vegetable dinner ever! Using wild cod makes the fajitas so light and tasty! Plus, the spice combo “paste” to flavor this dish provides a rich savory Southwestern flavor. Simply just add 1-2 teaspoons of shredded cheddar, and the dish will be complete!

INGREDIENTS

12 ounces wild cod loin, cut into 1-inch chunks

2 cups sliced bell pepper (any color)

2 cups sliced red onion

2 cups zucchini,  cut in half discs

2 teaspoons olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

Juice from 1/2 lime

1 teaspoon cumin

1 teaspoon garlic, minced

Salt and Pepper to Taste

4 soft corn tortillas

Lime wedges, for garnish

Fresh cilantro, for garnish

DIRECTIONS

Preheat oven to 400°F. Line a sheet pan with parchment paper.

Combine olive oil, paprika, chili powder lime, cumin, garlic and salt and pepper that will create a marinade. Divide the marinade into two parts, and place in two bowls

In one of the bowls, toss bell pepper, zucchini, and onion with ½ marinade.  

Spread the vegetables out on the sheet pan in a single layer, and place in oven. Roast for 5 minutes. 

While vegetables are cooking, toss fish in the other bowl with the marinade. 

After 5 minutes, add fish to the sheet pan with the vegetables. Roast for another 15 minutes. 

Arrange 2 corn tortillas on each of 2 serving plates and top with an equal amount of the fish and vegetables. Squeeze ¼ lime over fish and vegetables. 

Serve each taco topped with shredded cheese, and any other garnishes of choice. Serve with lime wedges and cilantro for garnish, if desired.

I like to serve these with all of the ingredients neatly arranged on a large plate to assemble the tacos as you eat.

Look for taco-sized corn tortillas without any wheat flour in the ingredients. A serving of 2 corn tortillas should be around 100 calories. For the best texture, warm them in the oven for just 1 minute before serving.
