Watermelon Caprese Skewers

INGREDIENTS

Bamboo skewers

3 cups cubed watermelon

1 cup cherry tomatoes

8 ounces fresh mozzarella cheese (see tip)

1⁄4 cup sliced fresh basil

1 tablespoon balsamic glaze

DIRECTIONS

Create each skewer by threading a piece of watermelon, then a whole tomato, then mozzarella, then another piece of watermelon, tomato, and mozzarella.

Continue until you’ve made 8 skewers or used up all of your ingredients.

Lay the 8 skewers out on a serving platter and sprinkle with sliced fresh basil.

Drizzle with balsamic glaze before serving.


Mona’s Tips: Snack-sized fresh mozzarella balls (known as "ciliegine" or cherry size) work best for this recipe but a square block of fresh mozzarella can also be cut into cubes to thread onto the skewers.

Ingredient Insider: Look for balsamic glaze without corn syrup in the ingredients or make your own by bringing equal parts balsamic vinegar and honey to a light simmer for 3 minutes.
