INGREDIENTS

2/3 cup diced cooked chicken

1/2 cup shredded Cheddar-jack cheese

1/3 cup canned black beans

1/3 cup frozen corn kernels

2 tablespoons diced red bell pepper

1 tablespoon chopped cilantro

2 teaspoons chili powder

1/2 teaspoon ground cumin

1/4 teaspoon salt

1 large egg

8 egg roll wrappers

8 dashes olive oil spray

2/3 cup salsa

1/4 cup sour cream

DIRECTIONS

In a mixing bowl, fold together chicken, Cheddar-jack cheese, drained black beans, corn kernels, bell pepper, cilantro, chili powder, cumin, and salt to create a filling.

In a small bowl, beat the egg and set aside. Lay out an egg roll wrapper and top the side closest to you with 3 tablespoons of the filling. Fold the left and right sides over the filling and tightly roll up like a burrito, stopping once 2/3 rolled.

Fold the corners of the unrolled portion in like an envelope and brush lightly with egg. Resume rolling until the egg has sealed the egg roll closed. Repeat until you have 8 egg rolls.

Spray egg rolls with olive oil spray on all sides and place in a single layer in the Airfryer basket. Start the device with the indicated time and temperature.

Temperature: 400 °F

In a serving bowl, combine the salsa and sour cream to create a dipping sauce to serve alongside the egg rolls, if desired.
