INGREDIENTS

Meatballs

1 pound ground chicken breast

1 large egg, beaten

1/4 cup gluten-free panko breadcrumbs

2 green onions, minced

1 1⁄2 tablespoons coconut aminos or reduced-sodium tamari soy sauce

1 teaspoon orange zest 2 teaspoons sesame oil

Orange Sauce

1/2 cup orange juice

1 tablespoon coconut aminos or reduced-sodium tamari soy sauce

2 teaspoons honey

1 teaspoon orange zest

1/4 teaspoon crushed red pepper flakes

1 1/2 teaspoons cornstarch

1 tablespoon cold water

1 teaspoon sesame oil

1. Spray the air fryer basket with avocado oil spray.

2. In a mixing bowl, use your hands to combine all meatball ingredients.

3. To keep the ground chicken from sticking to your hands, spray them with avocado oil spray. Form the meatball mixture into golf ball–sized balls and place in the air fryer. Use tongs to flip the meatballs halfway through the cook time.

375°F air fry 12–14 mins

4. Meatballs are done when lightly browned and a meat thermometer registers 165°F.

5. Meanwhile, prepare the orange sauce by placing orange juice in a small saucepan on the stovetop over medium heat. Whisk in coconut aminos, honey, orange zest, and pepper flakes and bring up to a simmer.

6. Whisk cornstarch into 1 tablespoon of cold water and then whisk into the simmering sauce. Stirring constantly, let simmer at least 1 minute.

7. Remove from heat and stir in sesame oil. Toss cooked meatballs in the sauce before serving.
