INGREDIENTS

1 cup walnut halves and pieces

1 tablespoon honey

1 teaspoon ground cinnamon

1 pint fresh blueberries

3/4 cup shredded or shaved unsweetened coconut

1/3 cup extra-dark chocolate chips

DIRECTIONS

Preheat oven to 350°F. Line a sheet pan with parchment paper.

In a mixing bowl, toss walnuts with honey and cinnamon to lightly coat. Spread in a single layer on the prepared sheet pan.

Bake 7 minutes, flip, then bake an additional 5 minutes, or until toasted and fragrant. Let cool completely.

In a food storage container, combine cinnamon walnuts, blueberries, coconut, and chocolate chips to create the trail mix. For maximum freshness, store the full batch of trail mix refrigerated. Individual portions will stay fresh for the full day unrefrigerated, so that it can be a great portable snack.

For even more flavor, toast the coconut: Heat a heavy skillet over medium heat. Add the shredded coconut and heat, stirring frequently, until golden brown, about 7 minutes.
