Buffalo Cauliflower Bites

INGREDIENTS

1 small head cauliflower, chopped

into bite-sized pieces

1/4 cup gluten-free breadcrumbs

3 tablespoons buffalo sauce

2 tablespoons butter

1/2 teaspoon garlic powder

Chunky Blue Cheese Dressing, optional, for dipping (see below)

Celery sticks, optional

DIRECTIONS

Toss chopped cauliflower in breadcrumbs, buffalo sauce, butter, and garlic powder until evenly coated.

Preheat air fryer at 400°F for 3 minutes before cooking.

Transfer the coated cauliflower to the air fryer basket and let cook 10–12 minutes, without flipping, until cauliflower is crisp-tender and beginning to brown.

Serve alongside Chunky Blue Cheese Dressing and celery sticks, if desired.

Chunky Blue Cheese

Ingredients

1/2 cup nonfat plain Greek yogurt

1/2 cup blue cheese crumbles

1 tablespoon unsweetened almond milk

1/2 teaspoon Worcestershire sauce

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon pepper

Directions

Stir together all ingredients. For best flavor, cover and refrigerate for 1 hour before serving. Store refrigerated for up to 1 week.


Mona’s Tips: This can also be made in the oven by baking at 450°F for 10 minutes, just until cauliflower begins to brown.

Ingredient Insider: Look for buffalo sauce that has 0g of fat. Some brands are more like high-fat dressings than hot sauce. For more heat, toss the cooked cauliflower in more buffalo sauce as soon as you remove it from the air fryer.
