Avocado Caesar Salad

Who doesn't love Caesar Salad, right? The issue, however, is the amount of fat and extra calories! Did you know that ONE tablespoon of Caesar Dressing can be over 80 calories with over 15 g fat?

I've created a delicious lighter version with only 25 CALORIES per tablespoon!!! So delicious and so much healthier! Why? Because I made it with avocado!!! You only need 2 tablespoons of dressing for each salad! I also added cucumber and Granny Smith apple so now you have a SUPER green salad,, including the dressing too!!

DRESSING INGREDIENTS

1 medium Hass avocado, halved, peeled, pitted and chopped

1/2 cup plant based milk (can use 2% milk if desired)

2 teaspoons anchovy paste

1 1/2 teaspoons lemon juice

1 teaspoon minced garlic

1 teaspoon Dijon mustard

1/2 teaspoon Worcestershire sauce

1/4 cup grated Parmesan

Salt and Pepper to taste

DIRECTIONS

Place the avocado in a food processor until smooth. Add all the remaining ingredients, except cheese, and process (or blend) until smooth. 

Fold the parmesan into the dressing, cover, and refrigerate for 1 hour before serving. Stores for up to a week.

SALAD INGREDIENTS

3 small heads romaine lettuce

1 Granny Smith apple, chopped

1 cucumber, chopped.

Shredded Parmesan cheese (to taste)

DIRECTIONS

Rinse, dry and chop or tear the romaine into bite-sized pieces. Add apple and cucumber chunks. Place in a large serving bowl and sprinkle with shredded parmesan cheese (1 tablespoon per serving). Drizzle each serving with 2 tablespoons caesar dressing and toss gently until lettuce is evenly coated.
