INGREDIENTS

1/3 cup dill pickle juice

2 teaspoons honey, optional for low-carb

2 small (5 to 6-ounce) boneless, skinless chicken breast cutlets

1 large egg

2 tablespoons almond milk

Salt and pepper

2/3 cup almond flour

1/2 teaspoon paprika

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1/4 teaspoon white pepper

Avocado oil spray

2 gluten-free or low-carb buns

Sliced dill pickles, lettuce, and tomato

DIRECTIONS

1. In a food storage container, toss chicken breasts in pickle juice and honey. Omit honey for the least carbs. Cover, refrigerate, and let marinate at least 30 minutes.

2. In a wide bowl, whisk together egg, almond milk, and a pinch of salt and pepper.

3. In a separate bowl, stir together almond flour, paprika, onion powder, garlic powder, white pepper, and a pinch of salt.

4. Remove chicken breasts from marinade and flip in the egg wash before flipping in the seasoned flour to coat well on both sides.

5. Transfer breaded chicken to the air fryer basket and spray with avocado oil spray on both sides.

Air Fry • 375°F • 12–15 mins

6. Flip chicken halfway through the cook time and spray with additional avocado oil. Chicken is done when a meat thermometer inserted into the thickest piece registers 165°F.

7. Meanwhile, toast the buns cut-side-down in a dry skillet over medium heat, just until golden brown. Top each bun with a few slices of dill pickle, a cooked chicken breast, lettuce, and tomato.
